Here’s a delicious Chicken Parmesan Grilled Cheese Sandwich recipe that combines the crispy-cheesy goodness of grilled cheese with the bold flavors of Chicken Parmesan:

Ingredients:

  • 2 cups cooked chicken breast (shredded or thinly sliced)

  • 1/2 cup marinara sauce (plus more for dipping)

  • 4 slices sourdough or Italian bread

  • 1 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • 1/2 tsp Italian seasoning

  • 1/2 tsp garlic powder (optional)

  • 2 tbsp softened butter (or garlic butter for extra flavor)

  • Fresh basil or parsley (optional, for garnish)


Instructions:

  1. Mix the Chicken & Sauce:

    • In a bowl, combine the shredded chicken with marinara sauce, Italian seasoning, and garlic powder.

  2. Assemble the Sandwiches:

    • Butter one side of each bread slice.

    • On the unbuttered side, layer mozzarella cheese, chicken mixture, Parmesan cheese, and more mozzarella. Top with the second slice of bread, buttered side facing out.

  3. Grill the Sandwiches:

    • Heat a skillet or griddle over medium heat.

    • Grill each sandwich for 3–5 minutes per side, pressing down gently, until golden brown and the cheese is melted.

  4. Serve:

    • Let sit for 1–2 minutes, then slice in half.

    • Serve hot with extra marinara sauce for dipping and garnish with fresh basil or parsley if desired.


🔁 Optional Add-Ons:

  • Add a slice of provolone or fresh mozzarella for a richer cheese pull.

  • Use breaded chicken cutlets instead of shredded chicken for a crunchier bite.

  • Add a pinch of red pepper flakes for some heat.
