Zesty Lemon Butter Fish Fillets

Servings: 2-4
Prep time: 5 minutes
Cook time: 10 minutes


Ingredients:

  • 4 fish fillets (such as cod, tilapia, or haddock)

  • Salt and pepper, to taste

  • 2 tablespoons olive oil

  • 3 tablespoons unsalted butter

  • 3 cloves garlic, minced

  • Juice of 1 large lemon (about 3 tablespoons)

  • Zest of 1 lemon

  • 1 tablespoon fresh parsley, chopped (optional)

  • Lemon slices, for garnish (optional)


Instructions:

  1. Season the fish: Pat the fillets dry with paper towels. Season both sides with salt and pepper.

  2. Cook the fillets: Heat olive oil in a large skillet over medium-high heat. Once hot, add the fish fillets and cook for about 3-4 minutes on each side, until golden and cooked through. Remove fish from the skillet and set aside.

  3. Make the lemon butter sauce:

    • Lower heat to medium.

    • Add butter to the same skillet.

    • Once melted, add minced garlic and sauté for about 30 seconds until fragrant (don’t burn it!).

    • Stir in the lemon juice and lemon zest. Cook for another 1-2 minutes, letting the sauce slightly thicken.

  4. Combine: Return the fish fillets to the skillet and spoon the lemon butter sauce over them. Let them warm through for a minute.

  5. Serve: Garnish with chopped parsley and lemon slices if desired. Serve immediately with your favorite sides (rice, veggies, or salad).
