Greek-Style Grilled Chicken Tenders

Ingredients:

  • 1 lb (450g) chicken tenders

  • 3 tbsp olive oil

  • 2 tbsp fresh lemon juice

  • 2 garlic cloves, minced

  • 1 tbsp dried oregano (or 1 ½ tbsp fresh oregano, chopped)

  • 1 tsp dried thyme (optional)

  • 1 tsp ground cumin (optional)

  • Salt and pepper to taste

  • Fresh parsley for garnish (optional)

  • Lemon wedges for serving (optional)

Instructions:

  1. Prepare the Marinade:

    • In a medium bowl, combine olive oil, lemon juice, minced garlic, dried oregano, thyme, cumin, salt, and pepper.

    • Whisk everything together until well combined.

  2. Marinate the Chicken:

    • Place the chicken tenders in a resealable plastic bag or shallow dish.

    • Pour the marinade over the chicken, ensuring each piece is well coated.

    • Seal the bag or cover the dish and refrigerate for at least 30 minutes to 2 hours. For best results, marinate for 4 hours or overnight.

  3. Grill the Chicken:

    • Preheat your grill to medium-high heat (about 400°F or 200°C).

    • Lightly oil the grill grates to prevent the chicken from sticking.

    • Remove the chicken tenders from the marinade and place them on the grill.

    • Grill the chicken for 4-5 minutes per side, or until the internal temperature reaches 165°F (75°C), and the tenders are golden brown and slightly charred.

  4. Serve:

    • Remove the chicken from the grill and let it rest for a few minutes.

    • Garnish with fresh parsley and serve with lemon wedges on the side.
