🧾 Ingredients:

For the Potato Pancakes:

  • 4 medium russet potatoes, peeled and grated

  • 1 small onion, grated

  • 1 egg

  • 2 tbsp all-purpose flour

  • Salt and pepper, to taste

  • Oil for frying (vegetable or canola)

For the Savory Beef Topping:

  • 1 tbsp olive oil

  • 1/2 onion, finely chopped

  • 2 garlic cloves, minced

  • 1/2 lb (225g) ground beef

  • 1 tbsp tomato paste

  • 1/2 tsp smoked paprika

  • 1/4 tsp chili flakes (optional)

  • Salt and pepper, to taste

  • 1/4 cup beef broth or water (to keep it moist)

For the Cheese Topping:

  • 1 cup shredded cheddar or mozzarella (or a mix)

  • Optional garnish: sour cream, chives, or parsley


🍳 Instructions:

1. Make the Potato Pancakes:

  1. Grate the potatoes and onion. Place them in a clean kitchen towel and squeeze out as much liquid as possible.

  2. Transfer to a mixing bowl, add the egg, flour, salt, and pepper. Mix well.

  3. Heat oil in a large skillet over medium-high heat.

  4. Scoop about 1/4 cup of the mixture for each pancake and flatten it in the pan.

  5. Fry until golden brown and crispy (about 3-4 minutes per side).

  6. Remove and drain on paper towels. Keep warm in a 200°F (90°C) oven.

2. Prepare the Beef:

  1. In another skillet, heat olive oil over medium heat.

  2. Sauté chopped onion and garlic until soft.

  3. Add ground beef, cook until browned.

  4. Stir in tomato paste, paprika, chili flakes, salt, and pepper.

  5. Add broth to keep the mixture moist. Simmer for a few minutes until thickened slightly.

3. Assemble and Melt the Cheese:

  1. Place warm potato pancakes on a serving plate.

  2. Top each with a spoonful of the beef mixture.

  3. Sprinkle generously with shredded cheese.

  4. Optional: Place under the broiler for 1-2 minutes to melt the cheese.

4. Serve:

Top with a dollop of sour cream and sprinkle with fresh chives or parsley. Serve hot.

  • Swap beef with shredded chicken, pulled pork, or vegetarian lentil chili.

  • Add sautéed mushrooms or bell peppers for extra flavor.
