Melt-in-the-Mouth Cake

Here’s a recipe for a Melt-in-the-Mouth Cake — soft, fluffy, and incredibly tender. This type of cake is usually a buttery sponge that dissolves effortlessly with every bite.


🍰 Melt-in-the-Mouth Cake Recipe

Ingredients:

  • 1 cup (225g) unsalted butter, softened

  • 1 cup (200g) granulated sugar

  • 4 large eggs, room temperature

  • 1 ½ cups (180g) all-purpose flour

  • 1 ½ tsp baking powder

  • ¼ tsp salt

  • ½ cup (120ml) whole milk, room temperature

  • 1 ½ tsp vanilla extract

  • Optional: zest of 1 lemon or orange for extra aroma

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.

  2. Cream the butter and sugar together in a large bowl until light and fluffy (about 3-5 minutes with an electric mixer). This step is key for that melt-in-the-mouth texture.

  3. Add the eggs, one at a time, beating well after each addition.

  4. Mix in the vanilla extract (and zest if using).

  5. In a separate bowl, sift together the flour, baking powder, and salt.

  6. Alternate adding dry ingredients and milk to the butter mixture:

    • Start and end with the flour mixture (flour → milk → flour → milk → flour), mixing just until combined after each addition. Do not overmix.

  7. Pour the batter into the prepared pan and smooth the top.

  8. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.

  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.


Optional Additions:

  • Dust with powdered sugar or drizzle with a glaze.

  • Serve with whipped cream and berries.

  • Use as a base for layer cakes or trifles.
