Ingredients

For the Salmon:

  • 2–4 salmon fillets (skin-on or skinless, ~6 oz each)

  • Salt and pepper, to taste

  • 2 tbsp olive oil

  • 3 tbsp unsalted butter

  • 2 garlic cloves, minced

  • Zest and juice of 1 lemon

  • 1 tbsp fresh parsley (or dill), chopped

For the Crispy Potatoes:

  • 1 lb baby potatoes (halved or quartered)

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • Β½ tsp garlic powder (optional)

  • 1 tsp fresh rosemary or thyme (optional)

For the Broccoli:

  • 1 head of broccoli, cut into florets

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • Red pepper flakes (optional)


Instructions

1. Prep and Roast the Potatoes

  1. Preheat oven to 425Β°F (220Β°C).

  2. Toss baby potatoes with olive oil, salt, pepper, garlic powder, and herbs on a baking sheet.

  3. Roast for 20 minutes. Shake the pan and continue roasting another 10–15 minutes, until golden and crispy.

2. Roast or Steam the Broccoli

  • Option A (Roast with potatoes): Toss broccoli florets with oil, salt, and pepper. Add to the baking sheet during the last 15 minutes of the potatoes’ roasting time.

  • Option B (Steam): Steam broccoli in a basket over boiling water for 5–7 minutes, until tender-crisp.

3. Cook the Salmon

  1. Pat salmon fillets dry and season with salt and pepper.

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Add salmon, skin-side down if applicable. Cook for 4–5 minutes, then flip and cook another 2–4 minutes, until opaque and flaky.

  4. Add butter to the pan. Once melted, stir in garlic, lemon juice, and zest. Spoon the lemon butter over the salmon for 1–2 minutes.

  5. Finish with fresh parsley or dill.

4. Assemble and Serve

  • Plate the salmon with crispy potatoes and broccoli.

  • Drizzle extra lemon butter sauce over the top if desired.

  • Optional: Add lemon wedges for garnish.


Tips

  • Crispier potatoes? Parboil for 5 minutes, then roast.

  • Extra flavor? Add a splash of white wine to the lemon butter sauce.
