For the Crispy Potatoes:

1 lb baby potatoes (halved or quartered)

2 tbsp olive oil

Salt and pepper, to taste

Β½ tsp garlic powder (optional)

1 tsp fresh rosemary or thyme (optional)
For the Broccoli:

1 head of broccoli, cut into florets

1 tbsp olive oil

Salt and pepper, to taste

Instructions
1. Prep and Roast the Potatoes

Preheat oven to 425Β°F (220Β°C).

Toss baby potatoes with olive oil, salt, pepper, garlic powder, and herbs on a baking sheet.

Roast for 20 minutes. Shake the pan and continue roasting another 10β15 minutes, until golden and crispy.
2. Roast or Steam the Broccoli

Option A (Roast with potatoes): Toss broccoli florets with oil, salt, and pepper. Add to the baking sheet during the last 15 minutes of the potatoes’ roasting time.

Option B (Steam): Steam broccoli in a basket over boiling water for 5β7 minutes, until tender-crisp.
3. Cook the Salmon

Pat salmon fillets dry and season with salt and pepper.

Heat olive oil in a large skillet over medium-high heat.
