Here’s a fresh and flavorful Zesty Lime Shrimp and Avocado Salad recipe — perfect for a light lunch or dinner!


🥗 Zesty Lime Shrimp and Avocado Salad

Ingredients:

For the shrimp:

  • 1 lb (450g) shrimp, peeled and deveined (tail-off)

  • 1 tbsp olive oil

  • 1 garlic clove, minced

  • Salt and pepper to taste

For the salad:

  • 1 large avocado, diced

  • 1 cup cherry tomatoes, halved

  • 1/4 cup red onion, finely chopped

  • 1 small cucumber, diced

  • 1/4 cup fresh cilantro, chopped

  • 4 cups mixed greens (optional)

For the dressing:

  • Juice of 2 limes

  • 2 tbsp olive oil

  • 1 tsp honey or agave (optional, for a touch of sweetness)

  • 1/2 tsp cumin

  • Salt and pepper to taste


Instructions:

  1. Cook the Shrimp:

    • In a skillet over medium heat, heat 1 tbsp olive oil.

    • Add minced garlic and shrimp.

    • Season with salt and pepper.

    • Cook 2–3 minutes per side, or until shrimp are pink and opaque.

    • Remove from heat and let cool slightly.

  2. Prepare the Dressing:

    • In a small bowl, whisk together lime juice, olive oil, honey, cumin, salt, and pepper.

  3. Assemble the Salad:

    • In a large bowl, combine avocado, cherry tomatoes, red onion, cucumber, and cilantro.

    • Add cooled shrimp and toss gently.

    • Drizzle dressing over the salad and toss again.

    • Serve on a bed of mixed greens if desired.


✅ Tips:

  • For extra flavor, marinate the shrimp in lime juice, garlic, and olive oil for 15–20 minutes before cooking.

  • Add a diced jalapeño for a kick!

  • Great served chilled or at room temperature.
