Fluffy Apple Pancakes

Here’s a Fluffy Apple Pancakes recipe that’s perfect for a cozy breakfast or brunch. These pancakes are thick, tender, and packed with apple flavor.


🍎 Fluffy Apple Pancakes Recipe

Ingredients (makes about 8 pancakes):

  • 1 ½ cups all-purpose flour

  • 2 tbsp sugar

  • 1 tbsp baking powder

  • ½ tsp ground cinnamon

  • ¼ tsp ground nutmeg (optional)

  • ¼ tsp salt

  • 1 ¼ cups milk

  • 1 large egg

  • 3 tbsp melted butter (plus extra for cooking)

  • 1 tsp vanilla extract

  • 1 cup peeled and grated apple (1 medium apple – Honeycrisp or Granny Smith works well)


Optional Add-ins:

  • ¼ cup chopped walnuts or pecans

  • A handful of raisins

  • Maple syrup or powdered sugar for serving


🥣 Instructions:

  1. Mix dry ingredients:
    In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.

  2. Mix wet ingredients:
    In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.

  3. Combine:
    Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix — lumps are okay!

  4. Fold in apples:
    Gently fold the grated apple into the batter. Let the batter rest for 5 minutes (this helps them become extra fluffy).

  5. Cook:
    Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil. Scoop about ¼ cup of batter for each pancake. Cook until bubbles form on the surface and edges look set (2–3 minutes), then flip and cook another 1–2 minutes until golden brown.

  6. Serve warm with maple syrup, butter, or a dusting of powdered sugar.


🍁 Tips:

  • Add a pinch of cloves or ginger for extra spice.

  • For extra fluffiness, you can separate the egg and whip the white to soft peaks, then fold it into the batter at the end.
