🍯 Honey Mustard Chicken with Roasted Asparagus

📝 Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs if preferred)

  • Salt and pepper to taste

  • 1 tbsp olive oil (for searing)

Honey Mustard Sauce:

  • 1/4 cup Dijon mustard

  • 1/4 cup honey

  • 1 tbsp whole grain mustard (optional, for texture)

  • 1 tbsp olive oil

  • 2 tsp apple cider vinegar (or lemon juice)

  • 2 garlic cloves, minced

  • Salt and pepper to taste

For the Roasted Asparagus:

  • 1 bunch of asparagus, trimmed

  • 1 tbsp olive oil

  • Salt and pepper

  • Optional: grated Parmesan or lemon zest for garnish


🔪 Instructions:

1. Preheat Oven:
Preheat your oven to 400°F (200°C).

2. Make the Honey Mustard Sauce:
In a small bowl, whisk together all honey mustard sauce ingredients. Adjust sweetness and tang to taste.

3. Sear the Chicken:

  • Season chicken with salt and pepper.

  • Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat.

  • Sear chicken for 2–3 minutes per side until golden brown (it won’t be cooked through yet).

4. Add Sauce and Bake:

  • Pour the honey mustard sauce over the chicken.

  • Transfer the skillet to the oven and bake for 20–25 minutes, or until the chicken reaches an internal temp of 165°F (74°C).

5. Roast the Asparagus:

  • While the chicken is baking, place asparagus on a sheet pan.

  • Drizzle with olive oil, season with salt and pepper.

  • Roast in the oven for the last 12–15 minutes of the chicken’s cook time, or until tender-crisp.
