🍯 Honey Mustard Chicken with Roasted Asparagus

For the Chicken:

4 boneless, skinless chicken breasts (or thighs if preferred)

1 tbsp olive oil (for searing)
Honey Mustard Sauce:

1/4 cup Dijon mustard

1/4 cup honey

1 tbsp whole grain mustard (optional, for texture)

1 tbsp olive oil

2 tsp apple cider vinegar (or lemon juice)

2 garlic cloves, minced

Salt and pepper to taste
For the Roasted Asparagus:

1 bunch of asparagus, trimmed

1 tbsp olive oil

Salt and pepper

Optional: grated Parmesan or lemon zest for garnish
🔪 Instructions:
1. Preheat Oven:
Preheat your oven to 400°F (200°C).
2. Make the Honey Mustard Sauce:
In a small bowl, whisk together all honey mustard sauce ingredients. Adjust sweetness and tang to taste.
3. Sear the Chicken:

Season chicken with salt and pepper.

Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat.

Sear chicken for 2–3 minutes per side until golden brown (it won’t be cooked through yet).
4. Add Sauce and Bake:

Pour the honey mustard sauce over the chicken.

Transfer the skillet to the oven and bake for 20–25 minutes, or until the chicken reaches an internal temp of 165°F (74°C).
5. Roast the Asparagus:

While the chicken is baking, place asparagus on a sheet pan.

Drizzle with olive oil, season with salt and pepper.

Roast in the oven for the last 12–15 minutes of the chicken’s cook time, or until tender-crisp.
