For the Dough (optional – or use store-bought pizza dough):

  • 2 ¼ tsp (1 packet) active dry yeast

  • 1 cup warm water (110°F/45°C)

  • 2 ½ cups all-purpose flour

  • 1 tsp sugar

  • 1 tsp salt

  • 1 tbsp olive oil

For the Filling:

  • 1 cup pizza sauce (store-bought or homemade)

  • 1 ½ cups shredded mozzarella cheese

  • ½ cup grated cheddar cheese (optional, for extra cheesiness)

  • Optional fillings:

    • Pepperoni slices

    • Cooked sausage

    • Diced bell peppers

    • Mushrooms

    • Black olives

    • Fresh basil

For Sealing & Topping:

  • 1 egg (for egg wash)

  • Optional: garlic powder, Italian seasoning, grated Parmesan

Step 1: Make the Dough (Skip if using store-bought)

  1. In a small bowl, combine warm water and sugar. Stir in yeast and let it sit for 5–10 minutes until frothy.

  2. In a large bowl, mix flour and salt. Add the yeast mixture and olive oil.

  3. Stir to form a dough, then knead on a floured surface for about 5–7 minutes until smooth.

  4. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.

Step 2: Prepare Filling

  1. In a small bowl, mix mozzarella, cheddar (if using), and any optional fillings.

  2. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 3: Assemble Pizza Pockets

  1. Divide dough into 8 equal portions.

  2. Roll each portion into a 5–6 inch circle.

  3. Spoon 1–2 tablespoons of pizza sauce on one half of the circle, leaving the edges clear.

  4. Add a generous scoop of cheese and your favorite toppings.

  5. Fold the dough over to form a half-moon. Press edges with a fork to seal tightly.

  6. Place pockets on the baking sheet.

Step 4: Add Final Touches

  1. Beat the egg and brush over the tops for a golden finish.

  2. Sprinkle with garlic powder, Italian seasoning, or Parmesan if desired.

Step 5: Bake

  1. Bake for 15–18 minutes or until golden brown and puffy.

  2. Let cool slightly before serving — filling will be hot!
