Cheesy Biscuit Bake with Pepper Topping

Ingredients:

For the Biscuit Bake:

  • 2 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1 teaspoon salt

  • 1/2 teaspoon garlic powder (optional)

  • 1/4 teaspoon black pepper

  • 1/2 cup cold unsalted butter, cut into small pieces

  • 1 cup shredded sharp cheddar cheese (or your favorite cheese)

  • 3/4 cup milk (whole or 2%)

  • 1 large egg

For the Pepper Topping:

  • 1-2 tablespoons olive oil or melted butter

  • 1 medium bell pepper (red, yellow, or green), diced small

  • 1 small jalapeño or other chili pepper, finely chopped (optional, for heat)

  • 1/4 teaspoon smoked paprika (optional)

  • Salt and pepper, to taste

  • Fresh parsley or chives, chopped (for garnish)


Instructions:

  1. Preheat oven to 400°F (200°C). Grease a 9×9-inch baking dish or similar size.

  2. Make the biscuit dough:
    In a large bowl, whisk together flour, baking powder, salt, garlic powder, and black pepper. Add the cold butter pieces and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

  3. Add cheese: Stir in the shredded cheddar cheese.

  4. Mix wet ingredients: In a separate bowl, whisk together milk and egg. Pour into the dry ingredients and gently stir just until combined. The dough will be a little sticky.

  5. Transfer dough to baking dish: Spread the biscuit dough evenly into the prepared dish.

  6. Prepare the pepper topping:
    In a small skillet, heat olive oil or melted butter over medium heat. Add the diced bell pepper and jalapeño, sauté for about 3-4 minutes until softened but still a little crisp. Season with smoked paprika, salt, and pepper.

  7. Top the biscuit dough: Spread the sautéed pepper mixture evenly over the biscuit dough.

  8. Bake: Place the dish in the oven and bake for 20-25 minutes, or until the biscuits are golden and cooked through. A toothpick inserted in the center should come out clean.

  9. Garnish and serve: Sprinkle fresh parsley or chives on top for color and fresh flavor. Serve warm!
