Here’s a delicious recipe for Sourdough Cinnamon Rolls that combines the tangy flavor of sourdough with the sweet, spicy cinnamon goodness. Ready to bake?


Sourdough Cinnamon Rolls Recipe

Makes: About 12 rolls
Prep time: 3 hours (including rising)
Cook time: 20-25 minutes


Ingredients:

For the Dough:

  • 1 cup (240g) active sourdough starter (100% hydration, bubbly and active)

  • 1/2 cup (120ml) whole milk, warmed (around 100°F/38°C)

  • 1/4 cup (50g) granulated sugar

  • 1/4 cup (56g) unsalted butter, melted and slightly cooled

  • 1 large egg

  • 3 1/2 cups (440g) all-purpose flour

  • 1 tsp salt

For the Filling:

  • 1/2 cup (100g) brown sugar, packed

  • 2 tbsp ground cinnamon

  • 1/4 cup (56g) unsalted butter, softened

For the Glaze (optional):

  • 1 cup (120g) powdered sugar

  • 2-3 tbsp milk or cream

  • 1/2 tsp vanilla extract


Instructions:

  1. Mix the dough:
    In a large bowl, combine the sourdough starter, warm milk, sugar, melted butter, and egg. Stir to combine.

  2. Add dry ingredients:
    Add the flour and salt, mixing until a rough dough forms.

  3. Knead the dough:
    Turn dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 6-8 minutes.

  4. First rise:
    Place the dough in a greased bowl, cover with plastic wrap or a damp towel, and let rise at room temperature for about 3-4 hours until doubled in size. (You can also do a slower, overnight rise in the fridge for better flavor.)

  5. Prepare the filling:
    Mix the brown sugar and cinnamon in a small bowl.

  6. Shape the rolls:
    Punch down the dough and roll it out on a floured surface into a large rectangle (about 12×18 inches).

  7. Add filling:
    Spread the softened butter evenly over the dough, then sprinkle the cinnamon sugar mixture evenly on top.

  8. Roll up:
    Starting from the long side, tightly roll the dough into a log.

  9. Cut rolls:
    Slice into 12 equal pieces and place them cut side up in a greased 9×13 inch baking pan.

  10. Second rise:
    Cover the pan and let the rolls rise for 1-2 hours until puffy.

  11. Bake:
    Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes until golden brown.

  12. Glaze (optional):
    Mix powdered sugar, milk, and vanilla to make a glaze. Drizzle over warm rolls.
