Sourdough Cinnamon Rolls Recipe
Makes: About 12 rolls

Ingredients:
For the Dough:

1 cup (240g) active sourdough starter (100% hydration, bubbly and active)

1/2 cup (120ml) whole milk, warmed (around 100°F/38°C)

1/4 cup (50g) granulated sugar

1/4 cup (56g) unsalted butter, melted and slightly cooled

1 large egg

3 1/2 cups (440g) all-purpose flour

1 tsp salt
For the Filling:

1/2 cup (100g) brown sugar, packed

2 tbsp ground cinnamon

1/4 cup (56g) unsalted butter, softened
For the Glaze (optional):

1 cup (120g) powdered sugar
-
2-3 tbsp milk or cream
-
1/2 tsp vanilla extract
Instructions:

Mix the dough:
In a large bowl, combine the sourdough starter, warm milk, sugar, melted butter, and egg. Stir to combine. -
Add dry ingredients:
Add the flour and salt, mixing until a rough dough forms. -
Knead the dough:
Turn dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 6-8 minutes. -
First rise:
Place the dough in a greased bowl, cover with plastic wrap or a damp towel, and let rise at room temperature for about 3-4 hours until doubled in size. (You can also do a slower, overnight rise in the fridge for better flavor.) -
Prepare the filling:
Mix the brown sugar and cinnamon in a small bowl. -
Shape the rolls:
Punch down the dough and roll it out on a floured surface into a large rectangle (about 12×18 inches). -
Add filling:
Spread the softened butter evenly over the dough, then sprinkle the cinnamon sugar mixture evenly on top. -
Roll up:
Starting from the long side, tightly roll the dough into a log. -
Cut rolls:
