Cozy Gingerbread Cupcakes

Here’s a cozy and festive recipe for Gingerbread Cupcakes with Cinnamon Cream Cheese Frosting—perfect for holiday gatherings or a sweet winter treat!


🧁 Cozy Gingerbread Cupcakes

Ingredients:

  • 1 ½ cups all-purpose flour

  • 1 tsp baking soda

  • 1 ½ tsp ground ginger

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ¼ tsp ground cloves

  • ¼ tsp salt

  • ½ cup (1 stick) unsalted butter, softened

  • ½ cup brown sugar, packed

  • ½ cup molasses (unsulphured)

  • 1 large egg

  • ½ cup buttermilk

  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with 12 liners.

  2. In a medium bowl, whisk together flour, baking soda, spices, and salt.

  3. In a large bowl, cream butter and brown sugar until light and fluffy.

  4. Beat in molasses and egg until combined.

  5. Stir in vanilla, then alternate adding dry ingredients and buttermilk, beginning and ending with dry.

  6. Divide batter evenly among liners, filling about 2/3 full.

  7. Bake for 18–22 minutes, or until a toothpick comes out clean.

  8. Cool completely before frosting.


🍥 Cinnamon Cream Cheese Frosting

Ingredients:

  • 8 oz cream cheese, softened

  • ½ cup (1 stick) unsalted butter, softened

  • 3 cups powdered sugar

  • 1 tsp ground cinnamon

  • 1 tsp vanilla extract

  • Pinch of salt

Instructions:

  1. Beat cream cheese and butter together until smooth.

  2. Gradually add powdered sugar, mixing on low speed.

  3. Add cinnamon, vanilla, and salt; beat until fluffy.

  4. Pipe or spread onto cooled cupcakes.
