🌮 Walking Taco Casserole
Ingredients:

1 lb ground beef (or ground turkey)

1 packet taco seasoning

1/2 cup water
-
1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) Rotel (diced tomatoes with green chilies), drained

1 cup frozen corn (or canned/drained)
-
2 cups shredded cheddar cheese
-
4 cups Fritos (or any corn chips)

Optional toppings: sour cream, chopped lettuce, diced tomatoes, sliced jalapeños, green onions, salsa
Instructions:

Preheat Oven to 350°F (175°C).

Cook the Beef:

In a large skillet over medium heat, brown the ground beef until no longer pink.

Drain any excess grease.

Add taco seasoning and water; stir and simmer for 2–3 minutes.

Mix the Filling:

Stir in black beans, Rotel, and corn.

Cook for another 2–3 minutes until heated through.

Assemble the Casserole:

In a 9×13 baking dish, layer half the Fritos on the bottom.

Pour the meat mixture over the chips.

Sprinkle cheese evenly over the top.

Bake:

Bake uncovered for 15–20 minutes, until the cheese is melted and bubbly.

Finish with Toppings:

Remove from oven and sprinkle with remaining Fritos.

Add any fresh toppings you like — lettuce, tomato, sour cream, etc.
