Posted on June 2, 2025

ere’s a hearty and flavorful recipe for Country Ranch Green Beans and Potatoes with Bacon—a classic Southern-style side dish (or even a meal on its own) that’s perfect for family dinners or potlucks.

🥔 Country Ranch Green Beans and Potatoes with Bacon

📝 Ingredients:

  • 1 lb fresh green beans (trimmed and cut in half)
or use 2 cans (14.5 oz) of green beans, drained

  • 1½ lbs baby red or gold potatoes (halved or quartered)

  • 6 slices thick-cut bacon (chopped)

  • 1 small onion (chopped)

  • 2 cloves garlic (minced)

  • 1 packet ranch seasoning mix (1 oz, dry)

  • 1½ cups chicken broth

  • Salt & pepper to taste

  • Optional: Red pepper flakes for heat

🍳 Instructions:

  1. Parboil the Potatoes

    • In a large pot, boil potatoes in salted water for about 8–10 minutes, or until just fork-tender.

    • Drain and set aside.

  2. Cook the Bacon

    • In a large skillet or Dutch oven over medium heat, cook chopped bacon until crispy.

    • Remove bacon with a slotted spoon and set aside. Leave 2–3 tablespoons of bacon grease in the pan.

  3. Sauté the Aromatics

    • In the bacon grease, sauté the chopped onion until soft (about 4–5 minutes).

    • Add garlic and cook for 30 seconds, stirring constantly.

  4. Add Veggies & Seasoning

    • Add green beans and parboiled potatoes to the skillet.

    • Sprinkle the ranch seasoning packet over everything.

    • Pour in the chicken broth and stir gently to combine.

  5. Simmer

    • Bring to a low boil, then reduce to a simmer.

    • Cover and cook for 15–20 minutes, or until green beans are tender and broth is mostly absorbed.

  6. Finish & Serve

    • Stir in the cooked bacon.

    • Taste and season with salt, pepper, and optional red pepper flakes.

    • Serve warm as a side or hearty main dish.

🍽️ Tips:

  • Want it smokier? Add a dash of smoked paprika.

  • For extra richness, add a pat of butter before serving.

  • This dish also works great in a slow cooker — let me know if you want crockpot instructions.
