Butterscotch Cake with Caramel Frosting

Here’s a delicious Butterscotch Cake with Caramel Frosting recipe that’s rich, buttery, and perfect for celebrations or indulgent weekends.


🎂 Butterscotch Cake Recipe

Ingredients:

For the Butterscotch Cake:

  • 2 ½ cups (315g) all-purpose flour

  • 2 ½ tsp baking powder

  • ½ tsp salt

  • 1 cup (226g) unsalted butter, room temperature

  • 1 ½ cups (330g) brown sugar (preferably dark for deeper flavor)

  • ½ cup (100g) granulated sugar

  • 4 large eggs, room temperature

  • 2 tsp vanilla extract

  • 1 cup (240ml) whole milk

  • ½ cup (120ml) butterscotch sauce (homemade or store-bought, recipe below)


🍯 Homemade Butterscotch Sauce:

Ingredients:

  • ½ cup (113g) unsalted butter

  • 1 cup (220g) brown sugar

  • 1 cup (240ml) heavy cream

  • 1 tsp vanilla extract

  • ½ tsp salt

Instructions:

  1. In a saucepan over medium heat, melt butter and stir in brown sugar until dissolved.

  2. Slowly add cream while stirring. Bring to a simmer for 5–7 minutes.

  3. Remove from heat and add vanilla and salt.

  4. Let cool before using in cake or frosting.


🔪 Cake Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

  2. Whisk together flour, baking powder, and salt in a bowl.

  3. In a large bowl, cream butter, brown sugar, and granulated sugar until fluffy.

  4. Add eggs one at a time, then vanilla. Mix well.

  5. Alternate adding flour mixture and milk, beginning and ending with flour. Stir in butterscotch sauce.

  6. Divide batter evenly into pans and bake for 30–35 minutes or until a toothpick comes out clean.

  7. Cool completely before frosting.


🍮 Caramel Frosting:

Ingredients:

  • ¾ cup (170g) unsalted butter

  • 1 cup (220g) brown sugar

  • ¼ cup (60ml) milk

  • 3–4 cups (360–480g) powdered sugar, sifted

  • Pinch of salt

  • 1 tsp vanilla extract

Instructions:

  1. In a saucepan, melt butter and stir in brown sugar. Cook for 2–3 minutes until bubbly.

  2. Add milk and bring to a boil. Remove from heat and cool slightly.

  3. Gradually beat in powdered sugar, vanilla, and salt until smooth and spreadable. Add more sugar if needed for consistency.


🧁 Assembly Tips:

  1. Place one cake layer on a stand. Spread frosting evenly.

  2. Top with the second layer and cover top and sides with frosting.

  3. Drizzle extra butterscotch sauce over the top for an extra wow factor.

  4. Optional: Sprinkle with sea salt, chopped pecans, or toffee bits.
