Italian Sausage with Peppers and Onions

Ingredients:

  • 4 Italian sausages (mild or hot, your choice)

  • 2 tablespoons olive oil

  • 1 large onion, sliced

  • 2 bell peppers (red, green, or yellow), sliced

  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1/2 teaspoon crushed red pepper flakes (optional, for extra heat)

  • Salt and pepper, to taste

  • 1/4 cup chicken broth or water (optional, to deglaze)

  • Hoagie rolls or pasta, for serving (optional)

Instructions:

  1. Cook the sausages:
    Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sausages and cook, turning occasionally, until browned on all sides and cooked through (about 10-12 minutes). Remove from the skillet and set aside.

  2. Cook the veggies:
    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and bell peppers. Cook, stirring occasionally, until softened and slightly caramelized, about 8 minutes.

  3. Add garlic and seasoning:
    Stir in the minced garlic, oregano, red pepper flakes, salt, and pepper. Cook for another 1-2 minutes until fragrant.

  4. Combine and simmer:
    Slice the sausages into bite-sized pieces and return them to the skillet. Add the chicken broth or water if using to loosen up the pan and help the flavors meld. Simmer together for 5 minutes.

  5. Serve:
    Serve hot on hoagie rolls for a sandwich or over pasta or rice.
