🍋 Classic Lemon Loaf Cake

Ingredients:

  • 3 large eggs

  • 1 cup (200g) granulated sugar

  • ½ cup (120ml) vegetable oil

  • ½ cup (120g) Greek yogurt

  • ¼ to ½ cup (60–120ml) milk (adjust based on yogurt thickness)

  • 2 teaspoons vanilla extract

  • Zest and juice of 1 lemon

  • 1½ cups (190g) all-purpose flour

  • 1 packet (3.4 oz) instant lemon pudding mix

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

For the glaze:

  • 1 cup (125g) powdered sugar

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.

  2. In a large bowl, whisk together the eggs, sugar, and oil until combined.

  3. Add the yogurt, lemon zest, lemon juice, milk, and vanilla extract to the mixture. Whisk until smooth.

  4. In a separate bowl, sift together the flour, lemon pudding mix, baking powder, baking soda, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Pour the batter into the prepared loaf pan and smooth the top.

  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  9. For the glaze, whisk together the powdered sugar and lemon juice until smooth.

  10. Once the cake has cooled, drizzle the glaze over the top.
