Carrot Salad with Pineapple & Walnuts

Ingredients:

  • 3 large carrots, peeled and grated

  • 1 cup fresh pineapple, diced (or canned, drained)

  • 1/2 cup walnuts, roughly chopped

  • 2 tablespoons raisins (optional)

  • 2 tablespoons fresh lemon juice (or lime juice)

  • 1 tablespoon honey or maple syrup

  • 2 tablespoons olive oil (or a mild-flavored oil)

  • Salt and pepper to taste

  • Fresh parsley or mint for garnish (optional)


Instructions:

  1. In a large bowl, combine the grated carrots, diced pineapple, walnuts, and raisins (if using).

  2. In a small bowl, whisk together the lemon juice, honey, olive oil, salt, and pepper until well combined.

  3. Pour the dressing over the carrot mixture and toss gently until everything is evenly coated.

  4. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.

  5. Garnish with chopped fresh parsley or mint if you like.

  6. Chill in the fridge for about 15-20 minutes before serving for the flavors to meld.
