2 cups cooked rice (preferably day-old, cold rice works best)

8–10 medium shrimp, peeled and deveined

2 eggs, lightly beaten

1/2 cup diced onion

1/3 cup frozen peas and carrots (or chopped fresh veggies)

2–3 tablespoons soy sauce (adjust to taste)

1 tablespoon oyster sauce (optional for extra flavor)

2 cloves garlic, minced

Prep the Shrimp: Pat dry and lightly season with salt and pepper.

Cook the Eggs:

Heat 1/2 tbsp oil in a wok or large skillet over medium heat.

Scramble the eggs until just cooked. Remove and set aside.
