Turkey Salad

Ingredients:

  • 2 cups cooked turkey (shredded or chopped)

  • 1/2 cup celery (diced)

  • 1/4 cup red onion (finely chopped)

  • 1/4 cup dried cranberries or raisins (optional)

  • 1/4 cup walnuts or almonds (chopped, optional)

  • 1/2 cup mayonnaise or Greek yogurt (for a lighter version)

  • 1 tablespoon Dijon mustard (optional)

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

  • Mixed greens (optional for serving)

Instructions:

  1. Prepare the Turkey: If you don’t have leftover turkey, you can quickly cook some chicken or use pre-cooked turkey. Shred or chop it into bite-sized pieces.

  2. Mix the Vegetables: In a large bowl, add the chopped celery, red onion, and any other ingredients you’re using (cranberries, nuts, etc.).

  3. Make the Dressing: In a separate small bowl, whisk together the mayonnaise or Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.

  4. Combine: Add the turkey to the vegetables, then pour the dressing over the top. Stir everything together until well-coated.

  5. Serve: You can serve this turkey salad on a bed of mixed greens, in a sandwich, or in a wrap!
