Classic Homemade Marshmallows
Ingredients:
3 envelopes (about 2 1/4 tsp each) unflavored gelatin
1 cup cold water, divided
2 cups granulated sugar
1/2 cup light corn syrup
1/4 tsp salt
1 tsp vanilla extract
Powdered sugar (for dusting)
Instructions:
Prep gelatin:
In the bowl of a stand mixer (or a large mixing bowl), sprinkle the gelatin over 1/2 cup of cold water. Let it sit and bloom while you prepare the syrup.
Make sugar syrup:
In a medium saucepan, combine the remaining 1/2 cup water, granulated sugar, corn syrup, and salt. Place over medium-high heat and stir until the sugar dissolves. Then, attach a candy thermometer and cook without stirring until the syrup reaches 240°F (115°C).
Mix gelatin and syrup:
Remove the syrup from heat. With the mixer running on low, slowly pour the hot syrup into the gelatin mixture. Once all syrup is added, increase the speed to high and whip until the mixture becomes very thick, white, and fluffy—about 10-15 minutes.
Add vanilla:
During the last minute of whipping, add the vanilla extract.
Set marshmallows:
Lightly grease a 9×13 inch pan and dust it with powdered sugar. Pour the marshmallow mixture into the pan and spread evenly. Dust the top with more powdered sugar.
Let them set:
Let the marshmallows sit uncovered at room temperature for at least 4 hours, preferably overnight.
Cut and serve:
Once set, use a knife or pizza cutter dusted with powdered sugar to cut the marshmallows into squares. Toss them in powdered sugar to prevent sticking.
