Slow Cooker Cheesy Scalloped Potatoes

Ingredients:

  • 4 large russet potatoes, peeled and thinly sliced

  • 1 small onion, finely chopped (optional)

  • 2 cups shredded sharp cheddar cheese

  • 1 1/2 cups heavy cream (or whole milk for a lighter version)

  • 2 tablespoons butter, melted

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon paprika (optional)

  • 2 tablespoons all-purpose flour (to thicken)

  • Fresh parsley or chives for garnish (optional)


Instructions:

  1. Prepare Potatoes: Peel and thinly slice the potatoes (about 1/8-inch thick). A mandoline slicer works great here.

  2. Mix Cheese Sauce: In a medium bowl, whisk together the heavy cream, melted butter, minced garlic, salt, pepper, paprika, and flour until smooth.

  3. Layer Ingredients: Spray your slow cooker with non-stick spray. Arrange half of the sliced potatoes evenly in the bottom. Sprinkle half the chopped onion (if using) and 1 cup of shredded cheddar over the potatoes.

  4. Add Sauce: Pour half of the cheese sauce evenly over the layers.

  5. Repeat Layers: Repeat the layering with the remaining potatoes, onions, cheese, and pour the rest of the cheese sauce on top.

  6. Cook: Cover and cook on LOW for 6–7 hours or until potatoes are tender when pierced with a fork.

  7. Finish: If you want a golden top, you can transfer the slow cooker insert to a preheated oven under the broiler for a few minutes. Watch carefully so it doesn’t burn!

  8. Serve: Garnish with fresh parsley or chives if desired. Serve warm.
