Here’s a flavorful Copycat Taco Bell Chili Cheese Burrito recipe (aka “Chilito”) — soft, cheesy, beefy, and just the right amount of spicy! 🌯🔥 This nostalgic fan-favorite was once a staple on the Taco Bell menu, and you can easily recreate it at home with simple ingredients.


🌯 Copycat Taco Bell Chili Cheese Burrito (Chilito)

Ingredients (Makes 4 burritos):

  • 1 lb ground beef

  • 1 can (15 oz) chili without beans (or homemade chili)

  • 1/2 small onion, finely chopped (optional)

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp chili powder

  • 1/2 tsp cumin

  • Salt and pepper, to taste

  • 1 1/2 cups shredded cheddar cheese (or a mix of cheddar and Monterey Jack)

  • 4 large flour tortillas (burrito-size)


Instructions:

1. Cook the Beef:

  • In a skillet over medium heat, cook ground beef (and onion, if using) until browned.

  • Drain excess grease. Add garlic powder, onion powder, chili powder, cumin, salt, and pepper.

2. Add the Chili:

  • Stir in the canned chili. Simmer for 5–10 minutes, allowing the mixture to thicken slightly.

3. Warm the Tortillas:

  • Heat tortillas in a dry skillet or microwave for a few seconds until soft and pliable.

4. Assemble the Burritos:

  • Spoon about 1/4 of the beef-chili mixture into the center of each tortilla.

  • Sprinkle generously with shredded cheese.

  • Roll tightly like a burrito — fold in the sides, then roll from the bottom.

5. Optional – Toast It:

  • For extra flavor and a slight crunch, sear the burrito seam-side down in a skillet for 1–2 minutes.

  • For a creamier version, stir in a spoonful of nacho cheese sauce before wrapping.

  • Want it spicier? Add a dash of hot sauce or diced jalapeños to the filling.

  • These freeze great! Wrap individually in foil or plastic wrap and reheat as needed.
