🍤 Long John Silver’s Batter (Copycat Recipe)
Ingredients:

¾ cup all-purpose flour

2 tablespoons cornstarch

¼ teaspoon baking soda

¼ teaspoon baking powder

½ teaspoon salt

½ teaspoon sugar

½ cup cold water (or club soda for extra crispiness)

1/8 teaspoon onion powder (optional for flavor)

1/8 teaspoon paprika (optional for color and taste)
Instructions:

Mix Dry Ingredients
In a medium bowl, whisk together the flour, cornstarch, baking soda, baking powder, salt, sugar, and optional spices. -
Add Cold Water
Slowly add the cold water (or club soda), stirring until you get a smooth, pancake-batter-like consistency. It should be thick enough to coat the back of a spoon. -
Rest (Optional but Recommended)
Let the batter sit for 10–15 minutes to relax the gluten and allow the bubbles to work — this helps make the coating lighter and crispier. -
Heat Oil
Heat oil to 350–375°F (175–190°C) in a deep fryer or deep skillet. -
Batter and Fry
Dip fish or chicken into the batter, shake off excess, and carefully lower into the hot oil. Fry until golden brown and crispy — about 3–5 minutes depending on the size of the pieces. -
Drain and Serve
Drain on paper towels or a wire rack. Serve with tartar sauce, vinegar, or your favorite sides.
