Healthy Oat Cookies with Dried Fruit & Nuts
Ingredients:

1 ½ cups rolled oats

½ cup whole wheat flour (or oat flour for gluten-free)

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon salt

¼ cup coconut oil (melted) or olive oil

¼ cup honey or maple syrup

1 large egg (or flax egg for vegan: 1 tbsp ground flaxseed + 3 tbsp water)

1 teaspoon vanilla extract

½ cup mixed nuts (walnuts, almonds, pecans), chopped

½ cup dried fruit (raisins, cranberries, chopped apricots, or dates)
