Healthy Oat Cookies with Dried Fruit & Nuts

Ingredients:

  • 1 ½ cups rolled oats

  • ½ cup whole wheat flour (or oat flour for gluten-free)

  • ½ teaspoon baking soda

  • ½ teaspoon cinnamon

  • ¼ teaspoon salt

  • ¼ cup coconut oil (melted) or olive oil

  • ¼ cup honey or maple syrup

  • 1 large egg (or flax egg for vegan: 1 tbsp ground flaxseed + 3 tbsp water)

  • 1 teaspoon vanilla extract

  • ½ cup mixed nuts (walnuts, almonds, pecans), chopped

  • ½ cup dried fruit (raisins, cranberries, chopped apricots, or dates)

  • Optional: 2 tbsp chia seeds or flaxseeds for extra nutrition

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large bowl, mix oats, flour, baking soda, cinnamon, salt, and seeds if using.

  3. In another bowl, whisk together melted coconut oil, honey/maple syrup, egg, and vanilla.

  4. Pour the wet ingredients into the dry and stir until combined. Fold in nuts and dried fruit.

  5. Scoop spoonfuls of dough onto the baking sheet, flatten slightly with the back of a spoon.

  6. Bake for 10-12 minutes until edges are golden brown.

  7. Let cookies cool on the tray for 5 minutes, then transfer to a wire rack.
