Sweet Potato Bread

Here’s a delicious and moist Sweet Potato Bread recipe — perfect for breakfast, dessert, or a cozy snack!


🍠 Sweet Potato Bread Recipe

Ingredients

  • 1 ¾ cups (220g) all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ¼ tsp ground ginger (optional)

  • 1 cup mashed sweet potatoes (about 1 medium sweet potato, cooked and mashed)

  • ½ cup vegetable oil (or melted butter)

  • ½ cup brown sugar (packed)

  • ¼ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ¼ cup milk (any kind)

Optional Add-ins

  • ½ cup chopped pecans or walnuts

  • ½ cup raisins or dried cranberries

  • ½ cup chocolate chips


🧑‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

  2. Whisk dry ingredients: In a medium bowl, combine flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

  3. Mix wet ingredients: In a large bowl, whisk together mashed sweet potatoes, oil, brown sugar, granulated sugar, eggs, vanilla, and milk until smooth.

  4. Combine: Gradually add the dry ingredients into the wet, mixing just until combined. Do not overmix.

  5. Add extras (if using): Fold in nuts, dried fruit, or chocolate chips.

  6. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.

  7. Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.


🔁 Storage

  • Room temp: Wrapped tightly, it keeps for 2–3 days.

  • Fridge: Up to 1 week.

  • Freezer: Freeze slices individually for up to 3 months.
