Strawberry Shortcake Cheesecake Rolls are a delicious twist on classic strawberry shortcake and cheesecake, rolled up like a cinnamon roll but filled with creamy, fruity goodness. Here’s a full recipe for making them at home:


🍓 Strawberry Shortcake Cheesecake Rolls Recipe

Ingredients

For the Dough:
  • 2¼ tsp (1 packet) active dry yeast

  • ¾ cup warm milk (110°F / 43°C)

  • ¼ cup granulated sugar

  • 1 large egg

  • ¼ cup unsalted butter, melted

  • 2¾ cups all-purpose flour

  • ½ tsp salt

For the Cheesecake Filling:
  • 8 oz cream cheese, softened

  • ⅓ cup granulated sugar

  • 1 tsp vanilla extract

For the Strawberry Filling:
  • 1½ cups fresh or frozen strawberries, diced

  • 2 tbsp granulated sugar

  • 1 tsp lemon juice

  • 1 tbsp cornstarch + 1 tbsp water (slurry)

For the Crumb Topping:
  • ½ cup all-purpose flour

  • ¼ cup brown sugar

  • ¼ cup cold butter, cubed

  • Pinch of salt

For the Glaze (optional):
  • ½ cup powdered sugar

  • 1–2 tbsp milk or cream

  • ½ tsp vanilla extract


🧁 Instructions

1. Make the Dough

  1. In a bowl, combine warm milk and yeast. Let sit 5–10 mins until foamy.

  2. Add sugar, egg, melted butter, and salt. Mix.

  3. Gradually mix in flour until dough forms.

  4. Knead by hand or mixer for 5–7 minutes until smooth.

  5. Place dough in a greased bowl, cover, and let rise 1 hour or until doubled.

2. Prepare the Fillings

  • Cheesecake Filling: Beat cream cheese, sugar, and vanilla until smooth. Set aside.

  • Strawberry Filling: In a saucepan, combine strawberries, sugar, and lemon juice over medium heat. Cook until juicy (5–7 minutes). Add cornstarch slurry and stir until thickened. Let cool.

3. Crumb Topping

  • In a small bowl, mix flour, brown sugar, and salt. Cut in cold butter with a fork until crumbly.

4. Assemble the Rolls

  1. Roll dough into a 10×14-inch rectangle.

  2. Spread cheesecake mixture over dough.

  3. Spoon and spread the strawberry filling on top.

  4. Roll up tightly from the long side and slice into 9–12 rolls.

  5. Place rolls in a greased baking dish. Sprinkle crumb topping over each.

5. Bake

  • Preheat oven to 350°F (175°C).

  • Bake for 25–30 minutes or until golden and cooked through.

6. Glaze (Optional)

  • Mix powdered sugar, milk, and vanilla until smooth.

  • Drizzle over warm (not hot) rolls.


💡 Tips

  • Use room-temperature ingredients for smoother mixing.

  • Fresh strawberries give the best flavor, but frozen work too.

  • Chill rolls for 15 mins before slicing to hold shape better.
