Salmon Cobb Salad

Ingredients:

  • Salmon (1-2 fillets, grilled or baked)

  • Mixed greens (like arugula, spinach, or lettuce)

  • Tomatoes (cherry or diced)

  • Avocado (sliced)

  • Hard-boiled eggs (sliced)

  • Cucumber (sliced)

  • Bacon (crispy, chopped)

  • Blue cheese (crumbled, optional)

  • Red onion (thinly sliced, optional)

  • Olives (black or Kalamata, pitted)

  • Dressing (Ranch, Blue Cheese, or a lemon vinaigrette)

Directions:

  1. Prepare the Salmon: Season the salmon with salt, pepper, and any desired seasonings (like garlic powder or lemon zest). Grill or bake the salmon at 400°F (about 12-15 minutes) until cooked through. Flake the salmon into bite-sized pieces or serve as a whole fillet.

  2. Prepare the Salad: In a large bowl, add a generous amount of mixed greens. Add your sliced avocado, cucumber, tomatoes, hard-boiled eggs, olives, and red onion (if using).

  3. Add the Toppings: Scatter the flaked salmon on top of the salad. Add crispy bacon and crumbled blue cheese for that classic Cobb flavor.

  4. Dressing: Drizzle your preferred dressing over the salad. A simple lemon vinaigrette or a rich ranch dressing works great.

  5. Toss and Serve: Gently toss the salad to combine, or serve the ingredients separately for an arranged Cobb-style presentation.
