1 ¾ cups all-purpose flour

2 large eggs

1 cup buttermilk (or substitute with milk and 1 tbsp vinegar or lemon juice)

1 cup boiling water

Instructions:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until combined, being careful not to overmix. The batter should be smooth.

Slowly add the boiling water to the batter, mixing continuously. The batter will be thin, but this is normal. The boiling water ensures a soft texture.

Pour the batter evenly into the prepared cake pans.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
