Creamy Chia Seed Pudding Recipe

Ingredients:

  • 3 tablespoons chia seeds

  • 1 cup milk of choice (almond, coconut, oat, cow’s milk, etc.)

  • 1 teaspoon vanilla extract

  • 1-2 teaspoons sweetener (maple syrup, honey, agave, or sugar) — adjust to taste

  • Pinch of salt (optional, enhances flavor)

Optional toppings:

  • Fresh fruits (berries, banana slices, mango, etc.)

  • Nuts or seeds (almonds, walnuts, pumpkin seeds)

  • Coconut flakes

  • Nut butter drizzle (peanut butter, almond butter)

  • Dark chocolate chips or cacao nibs


Instructions:

  1. Combine Ingredients
    In a medium-sized bowl or jar, whisk together the chia seeds, milk, vanilla extract, sweetener, and salt until well combined.

  2. Let It Rest
    Allow the mixture to sit for about 5 minutes, then whisk again to break up any chia seed clumps. This helps the pudding set evenly.

  3. Refrigerate
    Cover the bowl or jar and refrigerate for at least 2 hours, preferably overnight. The chia seeds will absorb the liquid and create a thick, creamy pudding texture.

  4. Stir Before Serving
    Give the pudding a good stir before serving to ensure it’s evenly creamy.

  5. Add Toppings & Serve
    Top with your favorite fruits, nuts, or any of the optional toppings you like. Enjoy chilled!


Tips for Perfect Creamy Chia Pudding:

  • Milk Choices: Thicker plant milks like coconut or oat milk create creamier pudding. For a lighter version, use regular cow’s milk or almond milk.

  • Sweeteners: Adjust sweetness after chilling since the flavors meld and sometimes dull a bit.

  • Texture: If you want it extra creamy, blend the mixture in a blender for 30 seconds before refrigerating.

  • Batch Prep: Make a larger batch for meal prep; it keeps well in the fridge for up to 5 days.
