For the Chicken Packets:

4 boneless, skinless chicken breasts (or thighs)

2 cups baby potatoes, halved or quartered

2 cups fresh green beans (or broccoli, asparagus, or bell peppers)

1 tsp Italian seasoning (optional)

1 tbsp olive oil
For the Garlic Butter Sauce:

1/2 cup (1 stick) unsalted butter, melted

4 cloves garlic, minced

1 tbsp fresh parsley, chopped (or 1 tsp dried)

1 tbsp lemon juice (optional for a tangy twist)

Pinch of red pepper flakes (optional for heat)
🍳 Instructions:
1. Preheat & Prep:

Oven: Preheat to 400°F (200°C).

Grill: Preheat to medium-high heat.

Cut 4 large sheets of aluminum foil (about 12–14 inches each).
2. Make the Garlic Butter:
In a small bowl, combine melted butter, minced garlic, parsley, lemon juice, and red pepper flakes (if using). Set aside.
3. Assemble Foil Packets:
On each piece of foil:

Drizzle a little olive oil.

Place chicken breast in the center, season with salt, pepper, and Italian seasoning.

Add potatoes and green beans around the chicken.

Spoon 2–3 tablespoons of garlic butter over everything.
4. Seal the Foil Packets:
Fold the sides of the foil up over the contents and seal tightly to make a packet. Leave a little room inside for steam circulation.

Oven: Bake for 25–30 minutes, or until chicken is cooked through (internal temp 165°F / 74°C) and potatoes are tender.

Grill: Grill for 20–25 minutes over medium heat, turning once halfway through.
