🛒 Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts

  • Salt and black pepper, to taste

  • 1 tbsp olive oil (for searing)

For the Filling:

  • 1 tbsp olive oil or butter

  • 2–3 garlic cloves, minced

  • 2 cups fresh spinach, chopped

  • ½ cup dried cranberries (sweetened or unsweetened, your choice)

  • 4 oz Brie cheese, rind removed and sliced

  • ¼ tsp salt

  • ¼ tsp black pepper

Optional Glaze (for extra flavor):

  • 1 tbsp balsamic vinegar

  • 1 tsp honey or maple syrup


🍳 Instructions

1. Preheat Oven

Preheat your oven to 375°F (190°C).


2. Prepare the Filling

  • Heat 1 tbsp olive oil or butter in a skillet over medium heat.

  • Sauté minced garlic for about 30 seconds until fragrant.

  • Add chopped spinach and cook until wilted (about 2 minutes).

  • Stir in dried cranberries, salt, and pepper.

  • Remove from heat and set aside to cool slightly.

  • Once cooled, gently mix in the sliced Brie cheese.


3. Prepare the Chicken

  • Butterfly each chicken breast: slice horizontally through the middle without cutting all the way through, then open like a book.

  • Place each breast between plastic wrap and gently pound to even thickness (about ½ inch).

  • Season both sides with salt and pepper.


4. Stuff the Chicken

  • Divide the filling evenly and place it in the center of each chicken breast.

  • Fold the chicken over the filling and secure with toothpicks or kitchen twine.


5. Sear the Chicken

  • Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat.

  • Sear chicken breasts for 2–3 minutes per side until golden brown.


6. Bake the Chicken

  • Transfer the skillet to the preheated oven.

  • Bake for 15–20 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).


7. Optional Glaze (While Chicken Bakes)

  • In a small pan, mix 1 tbsp balsamic vinegar and 1 tsp honey or maple syrup.

  • Simmer for 3–5 minutes until slightly thickened.

  • Drizzle over chicken before serving.

  • A simple green salad with vinaigrette

  • Brie substitute: Camembert or goat cheese work well too.
