Here’s a  recipe for Cheesy Ranch Potatoes & Smoked Sausage — a delicious, comforting, and easy one-pan meal that’s perfect for weeknights.


Cheesy Ranch Potatoes & Smoked Sausage

Ingredients:

  • 1.5 lbs baby potatoes (red, gold, or a mix), halved or quartered if large

  • 1 lb smoked sausage (kielbasa or your favorite smoked sausage), sliced into 1/2-inch rounds

  • 2 tablespoons olive oil

  • 1 packet (1 oz) ranch seasoning mix (or homemade ranch seasoning)

  • 1 1/2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)

  • 2 tablespoons fresh parsley (optional, for garnish)

  • Salt and pepper to taste

  • Optional: 1/2 teaspoon garlic powder or paprika for extra flavor


Instructions:

  1. Preheat the Oven
    Preheat your oven to 400°F (200°C).

  2. Prepare Potatoes
    Wash and cut your baby potatoes. Toss them in a large bowl with olive oil, ranch seasoning mix, garlic powder/paprika (if using), and a pinch of salt and pepper. Make sure they’re well-coated.

  3. Arrange in Baking Dish
    Spread the potatoes evenly in a large baking dish or sheet pan. Roast in the preheated oven for 25-30 minutes or until the potatoes start to get tender and slightly golden.

  4. Add Sausage
    Remove the baking dish from the oven. Scatter the sliced smoked sausage evenly over the potatoes. Return to oven and bake for another 10-15 minutes until the sausage is heated through and the potatoes are fork-tender.

  5. Add Cheese
    Sprinkle the shredded cheese evenly over the top of the potatoes and sausage. Return the dish to the oven for 5-7 minutes or until the cheese is melted and bubbly.

  6. Garnish and Serve
    Remove from the oven and sprinkle with chopped fresh parsley for color and freshness. Serve hot!


Tips:

  • You can add veggies like bell peppers, onions, or broccoli for more color and nutrition.

  • If you want extra crispy potatoes, toss them in a little more oil and roast uncovered.

  • Use smoked gouda or pepper jack cheese for a flavor twist.
