For the beef:

  • 250g (Β½ lb) beef sirloin or flank steak, thinly sliced against the grain

  • 1 tbsp soy sauce

  • 1 tsp oyster sauce (optional)

  • 1 tsp cornstarch

  • 1 tsp sesame oil

  • 1 clove garlic, minced

  • Β½ tsp freshly ground black pepper

For the stir-fry:

  • 2–3 heads of baby bok choy, washed and halved or quartered lengthwise

  • 1 tbsp vegetable oil (or peanut oil)

  • 2 cloves garlic, thinly sliced

  • 1 tsp ginger, julienned (optional)

  • 2 tbsp water or broth (for steaming bok choy)

  • Salt, to taste

  • 1 tbsp soy sauce (to finish)

  • Β½ tsp sugar (balances the flavors)

1. Marinate the Beef:

In a bowl, mix the sliced beef with soy sauce, oyster sauce, cornstarch, sesame oil, garlic, and black pepper. Let it marinate for at least 10–15 minutes (or up to 30 if you have time).

2. Prep the Bok Choy:

Wash and drain the bok choy thoroughly. Halve or quarter them lengthwise depending on their size.

3. Cook the Beef:

  • Heat 1 tbsp oil in a wok or large skillet over high heat.

  • Add the beef in a single layer. Sear for 1–2 minutes without stirring, then stir-fry for another 1–2 minutes until just cooked through.

  • Remove beef from the pan and set aside.

4. Stir-Fry the Bok Choy:

  • In the same pan, add a touch more oil if needed.

  • Add garlic and ginger (if using), stir-fry for 30 seconds until fragrant.

  • Add bok choy, stir-fry for 1–2 minutes until lightly charred.

  • Add 2 tbsp water or broth, cover with a lid, and steam for 1–2 minutes until crisp-tender.

5. Combine & Finish:

  • Return the beef to the pan.

  • Add soy sauce and a pinch of sugar.

  • Toss everything together for 1 more minute until heated through and well-coated.


🍚 Serving Suggestions:

  • Serve hot over steamed jasmine rice or noodles.

  • Garnish with toasted sesame seeds or sliced green onions for extra flavor.
