For the beef:

250g (Β½ lb) beef sirloin or flank steak, thinly sliced against the grain

1 tbsp soy sauce

1 tsp oyster sauce (optional)

1 tsp cornstarch

1 tsp sesame oil

1 clove garlic, minced

Β½ tsp freshly ground black pepper
For the stir-fry:

2β3 heads of baby bok choy, washed and halved or quartered lengthwise

1 tbsp vegetable oil (or peanut oil)

2 cloves garlic, thinly sliced
-
1 tsp ginger, julienned (optional)

2 tbsp water or broth (for steaming bok choy)

Salt, to taste

1 tbsp soy sauce (to finish)

Β½ tsp sugar (balances the flavors)
πͺ Instructions:
1. Marinate the Beef:
In a bowl, mix the sliced beef with soy sauce, oyster sauce, cornstarch, sesame oil, garlic, and black pepper. Let it marinate for at least 10β15 minutes (or up to 30 if you have time).
2. Prep the Bok Choy:
Wash and drain the bok choy thoroughly. Halve or quarter them lengthwise depending on their size.
3. Cook the Beef:

Heat 1 tbsp oil in a wok or large skillet over high heat.

Add the beef in a single layer. Sear for 1β2 minutes without stirring, then stir-fry for another 1β2 minutes until just cooked through.
