Mediterranean Ricotta & Pita Board
Ingredients:

Ricotta cheese – 1 cup (whole milk ricotta is best)

Extra virgin olive oil – 2-3 tbsp

Lemon zest – from 1 lemon

Fresh herbs (such as basil, mint, oregano, or parsley) – a handful, chopped

Za’atar seasoning – 1 tsp (optional)

Honey – 1-2 tbsp

Cherry tomatoes – 1 cup, halved

Cucumber – 1 small, sliced or cut into sticks

Kalamata olives – ½ cup

Roasted red peppers – ½ cup, sliced

Pita bread – 4-6 pieces, cut into triangles

Salt & pepper – to taste

Optional extras: toasted pine nuts, crushed red pepper flakes, sliced radishes, or pickled vegetables

Prepare the ricotta spread:

In a bowl, combine the ricotta cheese with 1 tablespoon of olive oil, lemon zest, chopped fresh herbs, salt, and pepper.

Mix gently until smooth and creamy.

Spread the ricotta mixture in a shallow dish or bowl.

Drizzle a little olive oil and honey over the ricotta.
