🥙 Slow Cooker Beef Gyros
✅ Ingredients:
For the beef:

2.5 – 3 lbs beef chuck roast

1 medium onion, sliced
-
4 cloves garlic, minced
-
1/4 cup fresh lemon juice (about 2 lemons)
-
1/4 cup olive oil
-
1/4 cup beef broth
-
1 tbsp red wine vinegar (optional, for tang)
-
2 tsp dried oregano
-
1 tsp ground cumin
-
1 tsp smoked paprika
-
1/2 tsp ground cinnamon
-
Salt & black pepper to taste
For serving:

Pita bread or flatbread
-
Tzatziki sauce (store-bought or homemade – see below)
-
Chopped lettuce
-
Diced tomatoes
-
Sliced red onion
-
Crumbled feta cheese (optional)
-
Fresh parsley or dill for garnish
🧑🍳 Instructions:

Prepare the beef:

Place the sliced onions in the bottom of the slow cooker.

Rub salt, pepper, oregano, cumin, paprika, and cinnamon all over the beef.

Place beef on top of the onions.
-
Add garlic, lemon juice, olive oil, beef broth, and vinegar (if using) over the beef.

Slow cook:

Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is very tender and shreds easily.

Shred the beef:

Remove the beef from the slow cooker, shred it with two forks, and return it to the juices. Let it soak for 10–15 minutes on warm for extra flavor.

Assemble the gyros:

Warm pita bread, add a generous amount of beef, then top with lettuce, tomatoes, onion, feta, and a drizzle of tzatziki. Garnish with fresh herbs.

🥒 Optional: Homemade Tzatziki Sauce
Ingredients:

1 cup plain Greek yogurt
-
1/2 cucumber, grated and squeezed dry
-
1 clove garlic, minced
-
1 tbsp fresh lemon juice
-
1 tbsp chopped fresh dill (or 1 tsp dried)
-
Salt & pepper to taste
Instructions:

Mix all ingredients in a bowl. Chill at least 30 minutes before serving.
