🍽 Servings: 4
⏱ Time: 15–20 minutes
🧮 WW Points: 0 (if using cooking spray and zero-point ingredients)
📝 Ingredients:
-
1 lb 99% lean ground turkey or chicken (zero points)
-
1 bag (10–14 oz) coleslaw mix (shredded cabbage and carrots)
-
3–4 green onions, sliced
-
2–3 cloves garlic, minced
-
1 tbsp fresh ginger, grated (or 1 tsp ground ginger)
-
2–3 tbsp soy sauce (low-sodium preferred)
-
1 tbsp rice vinegar (optional, adds tang)
-
1–2 tsp sesame oil (optional – adds points if you count it)
-
Cooking spray or a splash of broth (to sauté, instead of oil)
-
Red pepper flakes or sriracha, to taste
🍳 Instructions:
-
Cook the meat
Spray a large skillet or wok with cooking spray.
Add ground turkey or chicken and cook over medium heat until browned and cooked through. Break it up as it cooks. -
Add aromatics
Stir in garlic, ginger, and white parts of the green onions. Cook for 1–2 minutes until fragrant. -
Add the veggies
Add the coleslaw mix. Stir-fry for 3–5 minutes until it softens a bit, but still has some crunch. -
Season
Add soy sauce, vinegar (if using), and red pepper flakes or sriracha for heat. Stir well.
If using sesame oil, drizzle it in at the end for flavor (optional but delicious). -
Finish & serve
Top with the green parts of the green onions. Taste and adjust seasoning. Serve warm!
🍽 Tips & Variations:
-
Add mushrooms, snap peas, or shredded zucchini for more veggies.
-
Top with a fried or poached egg (adds points but makes it rich).
-
Use tofu or edamame for a vegetarian version.
-
Serve with cauliflower rice for a fuller meal (still zero points!).
