Slow Cooker Poor Man’s Stew
Ingredients:

1 lb ground beef (or ground turkey for cheaper option)

1 medium onion, chopped

3-4 medium potatoes, peeled and diced

3 carrots, peeled and sliced

2 cloves garlic, minced (optional)

1 can (14.5 oz) diced tomatoes (with juice)

3 cups beef broth (or water + beef bouillon cube)

1 tsp Worcestershire sauce (optional)

1 tsp paprika
-
1 tsp salt

½ tsp black pepper
-
1 tsp dried thyme or Italian seasoning

1 cup frozen peas (added near the end)

2 tbsp flour (optional, for thickening)
Instructions:

In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.

Add chopped onions and garlic to the skillet and cook until softened (about 3-4 minutes).

Transfer the beef mixture to the slow cooker.

Add diced potatoes, carrots, diced tomatoes, broth, Worcestershire sauce, paprika, salt, pepper, and thyme.

Stir everything together.

Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.

About 30 minutes before serving, stir in frozen peas.

Optional: To thicken the stew, mix 2 tablespoons of flour with a little cold water to make a slurry, then stir it into the stew. Cook for another 15-30 minutes until thickened.

Taste and adjust seasoning as needed. Serve warm.
