Easy Crock Pot Balsamic Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1/2 cup balsamic vinegar

  • 1/4 cup honey (or brown sugar)

  • 2 tablespoons soy sauce (or tamari for gluten-free)

  • 3 cloves garlic, minced

  • 1 teaspoon dried basil (or Italian seasoning)

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Optional: 1/2 teaspoon crushed red pepper flakes (for a little heat)

  • Fresh parsley or basil for garnish (optional)

Instructions:

  1. Prepare the sauce:
    In a medium bowl, whisk together balsamic vinegar, honey, soy sauce, minced garlic, dried basil, salt, pepper, and red pepper flakes (if using).

  2. Add chicken to Crock Pot:
    Place the chicken breasts at the bottom of the slow cooker.

  3. Pour the sauce:
    Pour the balsamic mixture evenly over the chicken.

  4. Cook:
    Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.

  5. Optional – Thicken the sauce:
    If you want a thicker sauce, remove the chicken once cooked and pour the sauce into a small saucepan. Simmer on medium heat until it reduces and thickens to your liking. Then pour it back over the chicken.

  6. Serve:
    Garnish with fresh parsley or basil. Serve over rice, mashed potatoes, or with steamed vegetables.


Tips:

  • You can add veggies like sliced mushrooms, bell peppers, or onions to the slow cooker for a one-pot meal.

  • For extra flavor, sear the chicken in a pan for 2-3 minutes on each side before adding to the Crock Pot.

  • Leftovers keep well in the fridge for 3-4 days and also freeze well.
