Chicken subs

Posted on September 10, 2025

Here’s a recipe for Chicken Subs — delicious, hearty sandwiches packed with flavorful chicken and toppings. I’ll break it down step-by-step so you can make them from scratch or assemble quickly if you’re short on time.

Chicken Subs Recipe

Ingredients:

For the Chicken:

  • 2 large chicken breasts (boneless, skinless)

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon smoked paprika (or regular paprika)

  • 1/2 teaspoon chili powder (optional, for some heat)

  • Salt and pepper, to taste

For the Subs:

  • 4 sub rolls (hoagie rolls or French rolls)

  • 1 cup shredded lettuce (iceberg or romaine)

  • 1 medium tomato, thinly sliced

  • 1 small red onion, thinly sliced (optional)

  • 4 slices of provolone or mozzarella cheese (optional)

  • Pickles or banana peppers (optional)

  • Mayonnaise, mustard, or your favorite sandwich sauce

Instructions:

1. Prepare the Chicken:

  • Pat the chicken breasts dry with paper towels.

  • In a small bowl, mix garlic powder, onion powder, paprika, chili powder, salt, and pepper.

  • Rub the spice mix evenly over both sides of the chicken breasts.

  • Heat olive oil in a skillet over medium heat.

  • Cook chicken for about 6-7 minutes per side, or until fully cooked (internal temperature 165°F/74°C).

  • Remove from heat and let rest for 5 minutes.

  • Slice the chicken thinly against the grain.

2. Toast the Subs (optional but recommended):

  • Preheat your oven to 375°F (190°C).

  • Slice the sub rolls lengthwise but not all the way through (keep a hinge).

  • Place the rolls on a baking sheet, cut side up.

  • Toast in the oven for 5 minutes until slightly crispy.

3. Assemble the Subs:

  • Spread mayonnaise, mustard, or your preferred sauce on the inside of each roll.

  • Layer the sliced chicken evenly in each sub.

  • Add a slice of cheese on top of the hot chicken if you want it melted. You can put the assembled subs back in the oven for 2-3 minutes to melt the cheese.

  • Add lettuce, tomato slices, onions, pickles, or banana peppers as desired.

  • Close the sandwich and cut in half if preferred.

Tips & Variations:

  • For a BBQ chicken sub, toss the cooked chicken in BBQ sauce before assembling.

  • Add sautéed mushrooms or bell peppers for extra flavor.

  • Use grilled or fried chicken tenders instead of breasts for a quicker option.

  • For a spicy kick, add jalapeños or spicy mayo.
