Here’s a  recipe for Blueberry Pie Bombs, a delicious and easy-to-make dessert with gooey blueberry filling wrapped in a golden, flaky crust. These are great for snacks, parties, or a quick dessert fix.


🫐 Blueberry Pie Bombs Recipe

📝 Ingredients:

For the Pie Bombs:

  • 1 can (8 count) refrigerated buttermilk biscuits (like Pillsbury Grands)

  • 1 cup blueberry pie filling (store-bought or homemade)

  • 1 tsp lemon zest (optional, for brightness)

  • 1 tsp cornstarch (if your pie filling is too runny)

For Coating:

  • 2 tbsp unsalted butter, melted

  • 1/4 cup granulated sugar

  • 1 tsp ground cinnamon (optional but tasty)


🥣 Homemade Blueberry Pie Filling (Optional):

If you’d like to make your own filling:

Ingredients:

  • 1 ½ cups fresh or frozen blueberries

  • 1/4 cup sugar

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 tbsp cornstarch

  • 1 tbsp water

Instructions:

  1. In a small saucepan, combine blueberries, sugar, lemon juice, and zest over medium heat.

  2. In a small bowl, mix cornstarch and water into a slurry, then stir into the blueberry mixture.

  3. Cook until thickened (5–7 minutes), stirring often.

  4. Let it cool before using in pie bombs.


👩‍🍳 Instructions:

Step 1: Preheat Oven

  • Preheat your oven to 375°F (190°C).

  • Line a baking sheet with parchment paper or lightly grease it.


Step 2: Prepare the Biscuits

  • Separate the biscuits and flatten each into a 4–5 inch circle using your hands or a rolling pin.

  • If desired, mix lemon zest into the blueberry pie filling for extra flavor.


Step 3: Fill the Pie Bombs

  • Place about 1 tablespoon of blueberry filling in the center of each biscuit circle.

  • Be careful not to overfill — it may leak during baking.

  • Fold the edges of the dough over the filling and pinch to seal tightly.

  • Gently roll into a ball and place seam-side down on the prepared baking sheet.


Step 4: Bake

  • Bake in the preheated oven for 15–18 minutes, or until the tops are golden brown and puffed.


Step 5: Add the Coating

  • While pie bombs are still warm, brush them with melted butter.

  • In a small bowl, mix sugar and cinnamon (if using).

  • Roll or sprinkle each pie bomb in the sugar mixture until coated.


Step 6: Serve

  • Let cool slightly before serving — filling will be hot!

  • Enjoy warm or at room temperature. You can also drizzle with a simple vanilla glaze if you want extra sweetness.


🍽️ Optional Vanilla Glaze:

Ingredients:

  • 1/2 cup powdered sugar

  • 1–2 tsp milk

  • 1/4 tsp vanilla extract

Instructions:

  • Mix until smooth and drizzle over cooled pie bombs.


✅ Tips:

  • You can substitute blueberry filling with apple, cherry, or peach pie filling.

  • Make it in an air fryer at 350°F (175°C) for 8–10 minutes for an extra crisp version.

  • Seal edges well to prevent leakage during baking.
