The Miracle Leaf You’ve Probably Walked Right Past: Moringa Leaf Stir-Fry

Ingredients:

  • 2 cups fresh moringa leaves (or 1/2 cup dried moringa leaves)

  • 1 tablespoon olive oil or coconut oil

  • 2 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 small chili (optional), sliced

  • 1 teaspoon grated ginger (optional)

  • Salt to taste

  • Black pepper to taste

  • Juice of half a lemon or lime (optional)

  • 1 tablespoon soy sauce or tamari (optional for an umami boost)

Instructions:

  1. Prepare the Moringa Leaves
    If using fresh leaves, rinse them thoroughly under cold water to remove any dirt or grit. If dried, just measure out your powder or leaves.

  2. Heat the Oil
    In a medium skillet or wok, heat the olive or coconut oil over medium heat.

  3. Sauté Aromatics
    Add the minced garlic, chopped onion, chili, and ginger to the pan. Stir-fry for about 2-3 minutes until fragrant and the onions become translucent.

  4. Add Moringa Leaves
    Toss the moringa leaves into the pan. If fresh, they will wilt quickly; stir continuously for 3-4 minutes until tender but still bright green.

  5. Season
    Add salt, pepper, and soy sauce (if using). Stir well to combine all flavors.

  6. Finish with Citrus
    Remove from heat and squeeze fresh lemon or lime juice over the dish for a refreshing finish.

  7. Serve
    Serve hot as a side dish, or add to rice, noodles, or your favorite protein.
