Here’s a  recipe for High Protein Honey BBQ Chicken & Creamy Garlic Parmesan Potatoes — a delicious, balanced meal packed with protein and flavor.


High Protein Honey BBQ Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts (about 6 oz each)

  • Salt and pepper, to taste

  • 1 tablespoon olive oil

  • ½ cup BBQ sauce (preferably low sugar)

  • 2 tablespoons honey

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • Optional: chopped parsley or green onions for garnish

Instructions:

  1. Preheat Oven
    Preheat your oven to 375°F (190°C).

  2. Prepare Chicken
    Pat chicken breasts dry with paper towels. Season both sides with salt, pepper, smoked paprika, garlic powder, and onion powder.

  3. Sear Chicken
    Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken breasts and sear for 3-4 minutes on each side until golden brown.

  4. Mix BBQ Honey Sauce
    In a small bowl, combine BBQ sauce and honey.

  5. Bake with Sauce
    Pour the honey BBQ sauce over the chicken in the skillet, ensuring each piece is well coated. Transfer the skillet to the preheated oven.

  6. Bake
    Bake for 15-20 minutes until chicken is cooked through (internal temperature reaches 165°F or 75°C).

  7. Serve
    Garnish with chopped parsley or green onions if desired.


Creamy Garlic Parmesan Potatoes

Ingredients:

  • 1.5 lbs baby potatoes (or Yukon gold potatoes), halved or quartered if large

  • 2 tablespoons butter

  • 3 cloves garlic, minced

  • ¼ cup grated Parmesan cheese

  • ¼ cup plain Greek yogurt (for creaminess and extra protein)

  • ¼ cup low-fat milk (or milk of choice)

  • Salt and pepper, to taste

  • Fresh parsley, chopped (optional)

Instructions:

  1. Boil Potatoes
    Place potatoes in a pot and cover with water. Add a pinch of salt. Bring to a boil and cook until tender, about 12-15 minutes. Drain and set aside.

  2. Prepare Garlic Parmesan Sauce
    In the same pot, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant (don’t brown).

  3. Make Creamy Mixture
    Lower heat and stir in Parmesan cheese until melted. Add Greek yogurt and milk, stirring until smooth and creamy.

  4. Combine Potatoes and Sauce
    Return potatoes to the pot and toss gently to coat with the creamy garlic Parmesan sauce. Season with salt and pepper to taste.

  5. Serve
    Garnish with fresh parsley.

  • Plate 1 chicken breast alongside a generous scoop of creamy garlic Parmesan potatoes.

  • Add steamed green veggies (like broccoli or asparagus) for a balanced meal.
