✨ Ingredients

For the Dough:

  • 2 ¾ cups (345g) bread flour (or all-purpose flour, but bread flour is better for chew)

  • 2 tsp instant yeast (or active dry yeast)

  • ½ tsp salt

  • ¼ cup (60g) sweetened condensed milk

  • 2 tbsp (25g) sugar

  • 1 egg, room temperature

  • ¾ cup (180ml) warm milk (around 110°F / 43°C)

  • 3 tbsp (45g) unsalted butter, softened

Optional Egg Wash:

  • 1 egg + 1 tbsp milk (for shiny crust)

Condensed Milk Glaze (optional but delicious):

  • 2 tbsp sweetened condensed milk

  • 1 tbsp milk or cream


🍞 Instructions

Step 1: Activate Yeast (If using Active Dry Yeast)

  • Warm the milk to about 110°F (not hot).

  • Add sugar and sprinkle the yeast over it.

  • Let it sit for 5–10 minutes until foamy.
    Skip this step if using instant yeast.


Step 2: Make the Dough

  1. In a large bowl (or stand mixer bowl), mix:

    • Flour

    • Salt

    • Sugar

    • Instant yeast (if not already bloomed)

  2. In another bowl, whisk:

    • Warm milk

    • Egg

    • Condensed milk

  3. Add the wet ingredients to the flour mix.

  4. Mix until a shaggy dough forms.

  5. Knead by hand (10–15 min) or stand mixer with dough hook (8–10 min) until smooth and elastic.


Step 3: Add Butter

  1. Gradually add the softened butter, a little at a time.

  2. Continue kneading until fully absorbed.

  3. The dough should be soft, elastic, and slightly tacky but not sticky.


Step 4: First Rise (Proof)

  1. Place dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap.

  2. Let it rise in a warm place for 60–90 minutes, or until doubled in size.


Step 5: Shape the Dough

  • Punch down the dough.

  • Turn onto a floured surface.

  • Divide and shape:

    • For loaf: Shape into a log or divide into 3–4 balls and place in a loaf pan.

    • For rolls: Divide into 8–10 equal pieces and shape into balls.

  • Place shaped dough into greased pan or baking dish.


Step 6: Second Rise

  • Cover and let rise again for 30–45 minutes, or until puffy and nearly doubled.


Step 7: Egg Wash and Bake

  1. Preheat oven to 350°F (175°C).

  2. Brush the tops with egg wash (1 egg beaten with 1 tbsp milk).

  3. Bake for 25–30 minutes, or until golden brown on top and the internal temp is ~190°F (88°C).


Step 8: Glaze and Cool

  • While still warm, brush with the condensed milk glaze (condensed milk + milk).

  • Let cool on a wire rack before slicing.


💡 Tips for Success

  • Soft butter is key: It should be pliable, not melted.

  • Don’t rush the kneading: Kneading develops gluten, which gives the bread structure and fluffiness.

  • Test doneness: Tap the bottom of the bread — it should sound hollow.

  • Want extra milky richness? Add 1–2 tbsp milk powder to the dry ingredients.
