For the Biscuit Dough:

  • 2 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 2 tbsp granulated sugar

  • 1/2 cup (1 stick) cold unsalted butter, cut into small cubes

  • 3/4 cup cold buttermilk (or substitute: 3/4 cup milk + 2 tsp lemon juice)

Optional Topping:

  • 1 tbsp melted butter (for brushing)

  • Cinnamon sugar for sprinkling (2 tbsp sugar + 1/2 tsp cinnamon)

  • Powdered sugar glaze (1/2 cup powdered sugar + 1 tbsp milk)

1. Make the Apple Pie Filling:

  1. In a skillet over medium heat, melt 2 tbsp butter.

  2. Add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice.

  3. Cook for about 5โ€“7 minutes until apples soften.

  4. Stir in 1 tbsp flour and cook for another 1โ€“2 minutes to thicken the mixture.

  5. Remove from heat and stir in vanilla. Let it cool while making the biscuit dough.


2. Make the Biscuit Dough:

  1. Preheat your oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

  3. Cut in the cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.

  4. Add cold buttermilk and stir gently just until the dough comes together.

  5. Turn dough out onto a floured surface and pat it into a rectangle about 1/2 inch thick.


3. Assemble the Biscuits:

Option A: Fold-In Style (like filled pockets)

  1. Cut dough into 3×3-inch squares.

  2. Spoon about 1 tbsp of apple filling into the center of each square.

  3. Fold over like a triangle and press edges to seal (use a fork if needed).

  4. Place on baking sheet.

Option B: Layered Style (like pull-apart or swirl)

  1. Roll out dough into a rectangle (~10×12 inches).

  2. Spread cooled apple filling evenly on top.

  3. Fold the dough like a letter (in thirds), then gently flatten again.

  4. Cut into 2-inch squares and place on baking sheet.


4. Bake the Biscuits:

  • Bake for 18โ€“22 minutes, or until golden brown on top.


5. Finishing Touches (Optional but Recommended):

  • Brush tops with melted butter right out of the oven.

  • Sprinkle with cinnamon sugar, OR

  • Drizzle with a quick powdered sugar glaze.
