Apple Zucchini Bread

Here’s a delicious Apple Zucchini Bread recipe — moist, lightly spiced, and perfect for using up extra zucchini and apples!


🍞 Apple Zucchini Bread Recipe

Makes: 1 loaf (or about 12 slices)
Prep Time: 15 minutes
Bake Time: 55–65 minutes


📝 Ingredients:

  • 1 cup grated zucchini (unpeeled)

  • 1 cup grated apple (peeled or unpeeled, your choice)

  • 1 ½ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 tsp cinnamon

  • ¼ tsp nutmeg (optional)

  • 2 large eggs

  • ½ cup vegetable oil (or melted coconut oil)

  • ½ cup brown sugar, packed

  • ¼ cup granulated sugar

  • 1 tsp vanilla extract

  • ½ cup chopped nuts (e.g., walnuts or pecans) (optional)

  • ½ cup raisins or dried cranberries (optional)


🔧 Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.

  2. Grate the zucchini and apple. Use a clean kitchen towel or paper towels to gently squeeze out excess moisture from both.

  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

  4. In another bowl, beat together eggs, oil, brown sugar, white sugar, and vanilla until smooth.

  5. Stir the dry ingredients into the wet ingredients just until combined — do not overmix.

  6. Fold in the grated zucchini, apple, and optional nuts or dried fruit.

  7. Pour batter into the prepared loaf pan and smooth the top.

  8. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.

  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.


🍽️ Tips:

  • This bread freezes well! Wrap tightly and freeze for up to 3 months.

  • You can make muffins instead — reduce baking time to ~20–25 minutes.
