📝 Ingredients

For the Pork Chops:

  • 4 bone-in pork chops (¾ to 1 inch thick)

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • 2 tbsp flour (for dredging)

  • 2 tbsp vegetable oil (or butter)

For the Potatoes:

  • 4 medium Yukon Gold or Russet potatoes, peeled and sliced ¼ inch thick

  • Salt and pepper to taste

For the Gravy:

  • 2 tbsp butter

  • 1 medium onion, thinly sliced

  • 2 cloves garlic, minced

  • 2 tbsp all-purpose flour

  • 2 cups chicken broth (low sodium)

  • ½ cup milk or heavy cream (for a creamier gravy)

  • ½ tsp thyme (dried or fresh)

  • Salt and pepper to taste


🔪 Instructions

1. Season and Sear the Pork Chops

  1. Pat the pork chops dry.

  2. In a small bowl, mix the salt, pepper, paprika, garlic powder, and onion powder. Rub this spice mix onto both sides of the pork chops.

  3. Lightly dredge each pork chop in flour.

  4. Heat oil in a large skillet or Dutch oven over medium-high heat.

  5. Sear pork chops for 3–4 minutes per side until golden brown (they don’t need to be cooked through yet). Remove and set aside.

2. Sauté Onions and Make the Gravy

  1. In the same pan, reduce heat to medium and add 2 tbsp butter.

  2. Add sliced onions and cook until soft and caramelized (about 8–10 minutes).

  3. Stir in minced garlic and cook for 1 minute.

  4. Sprinkle flour over the onions and stir for 1–2 minutes to cook the flour.

  5. Gradually whisk in chicken broth and milk/cream. Stir constantly to prevent lumps.

  6. Add thyme, then season with salt and pepper to taste. Simmer for 5 minutes until thickened.

3. Assemble with Potatoes

  1. Preheat oven to 350°F (175°C), if baking.

  2. In a deep skillet, casserole dish, or Dutch oven, layer sliced potatoes evenly on the bottom.

  3. Season lightly with salt and pepper.

  4. Pour some gravy over the potatoes.

  5. Place the seared pork chops on top.

  6. Pour the remaining gravy over the pork chops.

4. Cook Until Tender

Option 1: Bake in Oven

  • Cover dish with foil or a lid.

  • Bake at 350°F (175°C) for 45–55 minutes, until potatoes are tender and pork chops are fully cooked (internal temp 145°F / 63°C).

Option 2: Simmer on Stove

  • Cover and simmer on low heat for 40–50 minutes, until potatoes are fork-tender and pork chops are cooked through.


🌿 Optional Add-Ins or Variations

  • Add sliced mushrooms to the onions for an earthy twist.

  • Add 1 tsp Dijon mustard or Worcestershire sauce to the gravy for extra depth.

  • Substitute sweet potatoes for a slightly sweeter flavor.


🍞 Serving Suggestions

  • Serve with steamed green beans, sautéed spinach, or peas.

  • A slice of crusty bread or cornbread pairs great to mop up that delicious gravy.


🧊 Storage & Reheating

  • Fridge: Store leftovers in an airtight container for up to 3 days.

  • Freezer: Freeze for up to 2 months. Thaw and reheat gently on the stovetop or microwave with a splash of broth or water.
