Bake Peppermint Bark Snowballs

Ingredients:

For the Snowballs:

  • 1 ½ cups unsalted butter (softened)

  • 2 ¼ cups all-purpose flour

  • ½ cup powdered sugar

  • 1 tsp vanilla extract

  • ½ tsp peppermint extract

  • 1 cup crushed peppermint bark (or crushed candy canes)

  • 1 pinch of salt

For the Peppermint Bark:

  • 8 oz white chocolate (chopped)

  • 4 oz dark chocolate (chopped)

  • 1 tsp peppermint extract

  • Crushed peppermint candies (optional, for extra crunch)

Instructions:

Making the Snowballs:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, cream the butter and powdered sugar together until smooth and fluffy.

  3. Add the vanilla and peppermint extracts and mix until combined.

  4. Gradually add the flour and a pinch of salt. Stir in the crushed peppermint bark (or candy canes).

  5. Roll the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet.

  6. Bake for 10-12 minutes, or until the edges are lightly golden. Let them cool completely on a wire rack.

Making the Peppermint Bark:

  1. In a heatproof bowl, melt the white chocolate using a double boiler or microwave, stirring until smooth.

  2. Once the white chocolate is melted, add the peppermint extract and stir.

  3. Pour the melted white chocolate over a parchment-lined baking sheet, spreading it into a thin, even layer.

  4. In another bowl, melt the dark chocolate and pour it over the white chocolate layer. Use a toothpick or skewer to swirl the two chocolates together for a marbled effect.

  5. While the chocolate is still soft, sprinkle the crushed peppermint candies over the top.

  6. Let the bark set in the fridge for about 30-60 minutes, or until firm.

  7. Once set, break the bark into small pieces.
