Chia Pudding Parfait Recipe
Ingredients:
-
For the chia pudding:
-
1/4 cup chia seeds
-
1 cup unsweetened almond milk (or any milk of your choice)
-
1 tsp vanilla extract
-
1-2 tbsp maple syrup (optional, or sweetener of your choice)
-
-
For the parfait layers:
-
1/2 cup fresh berries (strawberries, blueberries, raspberries, etc.)
-
1/4 cup granola
-
Greek yogurt or coconut yogurt (optional for added creaminess)
-
Nuts or seeds for crunch (optional)
-
Instructions:
-
Make the Chia Pudding:
-
In a bowl or mason jar, combine the chia seeds, almond milk, vanilla extract, and maple syrup (if using).
-
Stir well, then cover and refrigerate for at least 2 hours, or overnight for best results. The chia seeds will absorb the liquid and thicken up into a pudding-like consistency.
-
-
Assemble the Parfait:
-
In a glass or jar, start by adding a layer of chia pudding at the bottom.
-
Add a layer of fresh berries on top of the chia pudding.
-
Add a spoonful of Greek yogurt (or your choice of dairy-free yogurt) if you’d like extra creaminess.
-
Repeat the layers until the jar is full, finishing with a layer of berries and a sprinkle of granola on top.
-
-
Serve and Enjoy:
-
Top with extra nuts, seeds, or even a drizzle of honey if you like. Serve immediately or store in the fridge for later.
-
Variations:
-
Chocolate Chia Pudding: Add a tablespoon of cocoa powder or melted chocolate to the chia pudding mixture.
-
Tropical Parfait: Use coconut yogurt and top with mango, pineapple, and shredded coconut.
-
Nutty Crunch: Layer with almond butter or peanut butter for a protein boost.
